Dried Enoki Mushrooms/干しエノキタケ



Yesterday, before we went mushroom gathering, I did what I had wanted to do for a long time: Drying enoki mushrooms.
昨日、キノコ狩りに行く前に、ずっとやりたかったことをしました:エノキタケを干すことです。
The Feb. 5, 2006 edition of Me Ga Ten, a famous TV show aired every Sunday, featured enoki mushrooms, in which they dried fresh enoki mushrooms. They said that dried enoki mushrooms tasted like dried squid.
目がテンという有名な番組(日曜日放映)の2006年2月5日分はエノキタケ特集で、その中で、生のエノキタケを干していました。干しエノキタケはスルメのような味がするそうです。
Last night, I had some of them as an appetizer. I didn't think they tasted like dried squid, but I thought they were tasty in their own way.
昨晩は、つまみに少し食べました。スルメのような味がするとは思いませんでしたが、エノキはエノキなりに美味しいと思いました。
I put the rest of the dried enoki in the freezer.
残りの干しえのきは冷凍庫に入れました。

Mushroom Gathering/キノコ狩り




My son and I went mushroom gathering yesterday. Actually, we went to three different mountains, trying to get the mushrooms that are in season around this time of the year. We only succeeded in finding some honey mushrooms, which are in season in spring and fall. Honey mushrooms are called naratake in Japanese, but here in Niigata, they are called amandare. We gathered some bracken fern shoots (warabi in Japanese) as well, some of which were huge!
昨日は、息子と二人でキノコ狩りに行きました。3つの山に行き、この時期に旬にあるキノコを探しました。結局は、春と秋に旬の「ナラタケ」を少し見つけただけでした。ナラタケは新潟ではアマンダレと呼ばれます。ワラビも少し採りましたが、中にはでかいのもありました。

Unlike ostrich fern fiddleheads (kogomi or kogome in Japanese), bracken fern shoots (warabi) require the process called aku nuki (harshness removal). I use the special chemical shown below, whose main ingredient is baking soda. You can use baking soda instead. In the old days, people used ash.
こごみ(こごめ)と異なり、ワラビはあく抜きという作業が必要です。私は特殊な薬品を使っていますが(主成分は重曹)、重曹を代わりに使うこともできます。昔は、灰を使っていました。


This morning, the shoots look like this:

Drain, rinse, and soak in cold water for a few hours, drain, and put in the fridge or freezer.
水を切って、洗い、水に数時間漬け、水を切り、冷蔵庫または冷凍庫に入れます。

Ama Ebi (Sweet Shrimp/甘エビ


I bought a pack of ama ebi the other day. They were not imported ones but domestic ones from Hokkaido, and were plump and had roe on their bellies.
先日、甘エビを一パック買いました。輸入物ではなく、北海道産です。ふっくらしていて、腹には卵がついてました。
The formal name for this species of shrimp is hokkoku aka ebi in Japanese, but the term ama ebi (lit. sweet shrimp) is widely used in Japan. In Niigata, the term nanban ebi is often used.
この種の海老の正式名は日本語ではホッコクアカエビですが、甘エビという名前が日本では広く使われています。新潟では、南蛮海老という名前がよく使われます。

Before serving, I removed the heads, rinsed them in water, put them in a pot of water, and brought them to a boil. Great miso soup the next morning.
出す前に、頭を取り、水で洗い、水を入れた鍋に入れ、沸騰させました。翌朝、素晴らしい味噌汁になりました。

Japanese-Style Hamburgers/和風ハンバーグ

I bought a new oil pot today at the nearby home improvment center for about 500 yen. The right one is the one I bought at a 100-yen shop months ago. Some items available at a 100-yen shop are great, while others are not so great. The oil pot falls into the latter category.
今日は近くのホームセンターで新しい油入れを約500円で買いました。右のは数ヶ月前に100円ショップで買ったものです。100円ショップにあるものはすごいのもあるし、それ程すごくないのもあります。この油入れは後者のほうです。

I made Japanese-style hamburgers for supper tonight. The special ingredients are shiitake mushroom stems, which I had stored in the freezer, kinako (roasted soybean flour), and grated ginger. Shiitake mushroom stems are edible and are too good to just throw away, kinako is a great source of glutamic acid according to the TV show, Tameshite Gatten, and grated ginger is a common ingredient of the Japanese equivalent of hamburger called tsukune.
今夜の夕飯には、和風ハンバーグを作りました。特別な材料はシイタケの軸(冷凍庫に入れておいたもの)、きな粉、おろしたしょうがです。しいたけの軸は食べられ、ただ捨てるのはもったいないですし、きな粉はすごいグルタミン酸源(「ためしてガッテン」によれば)、そしておろしたしょうがは、「つくね」というハンバーグに似たものによく入れます。
Soy sauce contains 1,500 mg of glutamic acid per 100 g; miso 2,200 mg; and kinako 6,200 mg.
しょう油には100 g当たりグルタミン酸を1,500 mg含み、味噌は2,200 mg、きな粉は6,200 mg含みます。



The garnishes were cabbage, canned corn, and shiso (perilla) leaves.
付け合せはキャベツ、缶詰のコーン、シソの葉です。
We also had pickles and tomatoes.
漬物とトマトも食べました。

The sauce for the hamburgers was a simple one (1:1:1 mixture of soy sauce, mirin, and sake).

Edited to add: I used minced pork to make these hamburgers. The slicer that I used to shred cabbage was a good buy (bought at a 100-yen shop).

Chawanmushi/茶碗蒸し







It was a slow day today, so I decided to make chawanmushi for supper, and started making it aroud four o'clock.
I searched the fridge for appropriate ingredients, and decided to use fake crab meat, chicken breast, menma (seasoned bamboo shoots), and shiitake.
今日は暇な一日だったので、夕飯に茶碗蒸しを作ろうと思い、4時頃、作り始めました。
適当な食材はないかと冷蔵庫の中を探して、かにカマ、鶏の胸肉、メンマ、シイタケを使うことにしました。

The basic recipe is:
2 large eggs
400 ml dashi
1 tsp soy sauce
1 tsp mirin
Touch of salt
基本のレシピーは:
卵L2
出汁400 ml
しょう油小1
みりん小1
塩少々
This recipe will result in an egg-to-dashi ratio of 1:4, which is common for chawanmushi, but I adjusted the recipe for a ratio of 1:3 by using 3 eggs (180 ml when broken and beaten) and 540 ml of dashi. I had found a site on which the chef said that she preferred a 1:3 ratio, and I wanted to try it.
このレシピーでは、卵と出汁の割合は1:4になり、これは茶碗蒸しでは一般的です。しかし、私は卵3つ(割って溶くと180 ml)と出汁を540 mlを使って、割合を1:3にしました。1:3の割合のほうが好きというシェフのサイトを見つけ、それを試したかったからです。

Cut chicken breast into small chunks and season with soy sauce and sake.
鶏の胸肉は小さく切り、酒としょう油で味付けします。

Combine beaten eggs with dashi and seasonings, mix well, and strain before pouring into individual cups.
溶き卵と出汁と調味料を合わせて、よく混ぜ、漉してから、各茶碗に注ぎます。

First, set the stove to high. When the steamer comes to a boil, keep heating on high heat for 2 min. and then turn the stove to low. Keep heating for another 10-13 min.
最初に強火にします。沸騰したら、強火のまま2分間加熱します。それから弱火にします。さらに10~13分加熱します。

Top each cup with mitsuba.
各茶碗にミツバをのせます。

Home-Made Hirame (Left-Eye Flounder) Nigiri/自家製ヒラメの握り

Around noon, I went shopping, and packs of hirame (left-eye flounder) sashimi caught my eye. They were so tempting that I bought one pack (398 yen).
昼頃、買い物に行くと、ヒラメの刺身のパックが目にとまりました。美味そうだったので、1パック買いました(398円)。

At first, I thought I'd simply have it with leftover rice, but I changed my mind to make nigiri.
最初は残りご飯と食べようと思ったのですが、気が変わり、握りを作ることにしました。

Needless to say, they were very delicious!

Proper Way to Place the Three Items on the Table/3点をテーブルに置く正しい方法


Just cooked, piping hot rice is a favorite of almost every Japanese.
炊きたて、熱々のご飯は、殆ど全ての日本人が大好きです。
Don't ever think that rice can be a side dish or garnish in Japan. In Japan, gohan (cooked rice) is synonymuos with shokuji (meal)!
日本ではご飯がサイドディッシュやツマになりうるとは決して思わないで下さい。日本語では、ご飯は食事と同義です。
Yesterday, I bought a pack of mitsuba to make chawanmushi (Japanese egg custard) in the near future. This morning, I used some of it as a garnish in clear soup.
昨日、そのうち茶碗蒸しを作ろうと、三つ葉を1パック買いました。今朝は少し澄まし汁に使いました。



By the "three items" in the title, I mean a pair of chopsticks (o-hashi or hashi in Japanese), a rice bowl (o-chawan or chawan in Japanese), and a soup bowl (o-wan in Japanese).
タイトルの「3点」とは、箸一膳、お茶碗(または茶碗)、お椀のことです。
o- is an honorific prefix, and is termed "bika go" (lit. beautifying word) nowadays.
「お」とは、丁寧語で、この頃は「美化語」と呼ばれています。
You must place the pair of chopsticks along the edge of the table, with the pointed ends directing to the left (even if you are left-handed). Place the rice bowl on your left and the soup bowl on your right.
箸を一膳、テーブルの端に沿って置きます。とがった先端を左に向けます(左利きの人でも)。お茶碗は左に、お椀は右に置きます。
Don't be innovative or creative when placing the three items!
この3点を置く際は、革新的、想像的にはならないで下さい!
Last night, I pickled three cucumbers in a 1:1 mixture (60 ml each) of mirin-like seasoning and vinegar plus 2/3 tsp salt and some shiso (perilla) leaves. They looked like this this morning.
昨晩は、キュウリを3本、みりん風調味料とお酢を1:1に混ぜたもの(60 mlづつ)漬けて、塩小さじ2/3とシソの葉を数枚入れました。今朝はこんな感じです。

Chopsticks, etc.・お箸など

Last Friday, I went to a 100-yen shop to get new chopsticks for my children. I bought two pairs, yellow and red ones. My son selected the red (yes, red) one, and my daughter the yellow one.
この前の金曜日、子供たちに新しい箸を買いに100円ショップに行きました。黄色と赤、2膳買いました。息子は赤いの(黄色ではなく)の、娘は黄色いのを選びました。
In Japan, chopsticks, o-chawan (rice bowls), and o-wan (soup bowls) are personal belongings. That is, each family member has their own set of chopsticks, rice bowl, and soup bowl.
日本では、お箸、お茶碗、お椀は個人のものです。つまり、家族それぞれ、自分の箸、茶碗、お椀を1セット持っています。

Golden Ratio for Soy Sauce and Mirin and Magic Furikake/しょう油とみりんの黄金比と魔法のふりかけ

For lunch yesterday, I had leftover yakisoba from the previous night. My yakisoba is usually very substantial, containing a lot of cabbage, onion, moyashi, and carrot besides pork, but the version shown in the photo is a lazy one, containing only moyashi, green peppers, and pork. The sad thing was that I was out of beni shoga (red pickled ginger) and ao nori (a type of seaweed).
昨日の昼食は、前の日の残りの焼きそばです。普通、私が作る焼きそばは、具沢山で、豚肉の他に、キャベツ、玉ねぎ、もやし、ニンジンが入りますが、写真に載せたのは、もやしとピーマンとポークだけの簡単バージョンです。悲しかったのは、紅しょうがと青海苔がなかったこと。

This morning, I made my "magic furikake", using two cans of mackerel, white sesame seeds, a 1:1 mixture of soy sauce and mirin (45 ml each), and some pepper.
今朝は、私の「魔法のふりかけ」を作りました。サバ缶2つ、白ゴマ、しょう油とみりんを1:1に混ぜたもの(45 mlづつ)、胡椒少し。



The reason why I call my furikake "magic furikake" is that whenever I have little appetite, having rice with this furikake causes me to get my appetite back. It's like magic. This happens to my wife and children, too. That's why I call it "magic furikake". Besides, the recipe calls for a 1:1 ratio for soy sauce and mirin, which is said to be a golden ratio.
このふりかけを「魔法のふりかけ」という理由は、食欲が殆どない時に、このふりかけでご飯を食べると、食欲が出てくるからです。魔法のようです。このことは妻にも子供にも起きます。だから、魔法のふりかけと呼んでいます。それに、このレシピでは、しょう油とみりんが1:1の比率になっています。これは、黄金比と言われています。

This morning, I made mugicha (barley tea). For most Japanese, it's a summer beverage, but as for me, I drink it all year round.
今朝は麦茶を作りました。大半の日本人にとって、夏の飲み物ですが、私は、一年中飲んでいます。

Stalk Tea Has Arrived/茎茶が届きました

As I mentioned in my foodblog on eGullet, I drink more than two liters of green tea a day. Today, another box of green tea arrived. Each bag contains 100 g of kuki cha (stalk tea) and costs 500 yen. I like this particular type of tea because it's light and tasty.
eGulletのフードブログで述べた通り、毎日、緑茶を2リットル以上飲んでいます。今日、緑茶がまた一箱届きました。各袋には茎茶が100 g入っていて、500円です。軽くて美味しいので、このタイプのお茶が好きです。


I use a patented V-Cut Filter to draw tea.
お茶を入れるのにVカットフィルターという特許製品を使っています。



I had asked the owner of the enoki mushroom factory to give me some used saw dust, and she kindly gave me a lot of it today.
エノキきのこ工場のオーナに使い古しのおがくずを少し分けてくれるように頼んでおきました。今日、たくさんもらえました。

Because I had to deliver the used saw dust to my house, I had less time left for lunch, so I had a very simple meal. Some packs of nori sheets and a bottle of "nori no tsukudani" (laver seasoned with soy sauce/mirin/sugar/sake). I had the nori sheets with a dipping sauce that I made by combining soy sauce and mirin at ratio of 1:1 and heating the mixture for 20-30 seconds in the microwave.
おがくずを家まで運ばなければならなかったので、昼食の時間が少なくなってしまいました。そこで簡単な食事をとりました。海苔を少しと海苔の佃煮です。海苔は、しょう油とみりんを1:1で合わせて、それを電子レンジで20~30秒温めて作ったタレで食べました。

The sauce is less salty than soy sauce and slightly sweet. Very simple to make yet very tasty.
このタレはしょう油よりしょっぱくなく、若干甘いです。作るのはとても簡単、でもとても美味しいです。


Finally, I had coffee jelly.
最後にコーヒーゼリーを食べました。

Strawberries/イチゴ

I got some strawberries from a neighbor. I'm glad because we can get fewer and fewer strawberries from our small vegetable garden.
隣の人からイチゴをもらいました。私たちの小さな菜園では取れる数がどんどん減っているので、うれしいです。


These are the plants that my son and I grow in our very small vegetable garden. Some are in planter containers, while the others in a square foot gardening (SFG) box.
これが、小さな菜園で育てているイチゴです。プランターで育てているのと、スクエア・フット・ガーデニング(SFG)の箱で育てているのがあります。
