Souvenirs from Shinshu/信州のお土産

I got these souvenirs from my father, who went to Shinshu, his native place, to attend a reunion.
同窓会に出席するため故郷の信州に行った父から、こんなお土産をもらいました。

Onsen manju:

You can find this type of manju in any onsen spot. One of my favorite types of manju.
このタイプのまんじゅうはどの温泉でも見ることができます。私の好きなまんじゅうの一つです。

Kurumi soba:
くるみそば:

Shiro an (white bean paste) wrapped in soba dough, topped with walnuts, and dusted with powder sugar.
白餡を蕎麦で包み、クルミを乗せた、粉砂糖をまぶしたものです。

Note: Shinshu is another name for Nagano, but the people of Shinshu prefer the name Shinshu. For them, Nagano sounds like Nagano city, the capital of Nagano prefecture.
注: 信州とは長野の別名ですが、信州人は信州という名前のほうが好きです。信州人には、「長野」とは、長野県の県庁所在地、長野市のように聞こえます。

Masu no Sushi (Trout's Sushi)/鱒のすし

The other day, we got these two souvenirs from a nephew, who visited Tomaya:
Shiro ebi (white prawn) sembei
Masu no sushi (trout's sushi)
Both are specialties of Toyama.
先日、富山に行った甥からお土産を二つもらいました。
白えびせんべい
鱒のすし
です。
両方とも富山の特産品です。

I didn't know anything about shiro ebi or shiro ebi sembei.
白えびと白えびせんべいのことは何も知りませんでした。

Crisp, and the fragrance of the prawn is wonderful!
パリッとしていて、エビの香りが素晴らしいです。

Masu no sushi is known throughout Japan.
鱒のすしは全国に知られています。








Needless to say, it tastes really good!
言うまでもなく、本当に美味しいです。

Enoki Koori (Enoki Ice), Continued/えのき氷、続き

For lunch today, I had some leftover curry with some of the enoki koori.
今日の昼食には、残りのカレーをえのき氷と一緒に食べました。


To properly make enoki koori, the three steps are required:
1. Processing in a blender
2. Simmering for one hour*
3. Freezing for breaking the cell walls

Enoki koori has been invented to facilitate the intake of mushroom chitosan, which has the effect of suppressing the accumulation of fat in the organs and blood. Enoki contains the most mushroom chitosan of all mushrooms, but for the substance to be effective in your body, you have to eat 100 g enoki per day.

* Simmering causes the protein to go away, but keeps intact the mushroom chitosan, which is a type of carbohydrate.

えのき氷を正しく作るには、次の3つが必要です:
1. ミキサーで砕く
2. 1時間煮込む*
3. 細胞壁を壊すため冷凍する

えのき氷は、臓器や血液への脂肪の蓄積を抑制する効果のある、きのこチトサンの摂取を簡単にするために発明されました。えのきはすべてのきのこの中で最も多くきのこチトサンを含みます。しかし、体の中でこの物質が効果を発揮するには、一日にえのきを100 gも食べる必要があります。

* 煮込むとタンパク質はなくなりますが、糖質の一種であるきのこチトサンは残ります。

I have no idea if my enoki koori, which was not made in a proper way, has the same effect as properly made enoki koori, but I can say that my way is very easy, and will help you consume enoki in large quantities.
正しい方法で作っていない、私のえのき氷が正しく作られたえのき氷と同じ効果があるのかまったく分りませんが、私の方法はとても簡単で、えのきを大量に摂取することができます。

Tochio Aburage/栃尾あぶらげ

Tochio city in Niigata prefecture is famous for its jumbo aburage. Aburage is short for abura age.
新潟県の栃尾市はジャンボあぶらげで有名です。「あぶらげ」とは「あぶらあげ」(油揚げ)の省略形です。

I bought one today because it was on sale for 98 yen. Compare the size with the normal-size abura age on the right.
98円で安売りしていたので、一枚買いました。右側の通常サイズの油揚げとサイズを比べて下さい。

You can see a hole in the upper part of the Tochio aburage on the left, which was made when the aburage was pierced with a skewer to drain the oil after deep-frying.
左側の栃尾あぶらげの上部に穴が見えます。これは、揚げた後に油を切るために串に刺した時にできたものです。

You can see how thick the Tochio aburage is from the photo. Note that the bag on the right contains three normal-size abura age.
この写真で栃尾あぶらげの厚さが分ります。右側の袋には通常サイズの油揚げが3枚入っています。

I'll add a photo of a dish using this Tochio aburage later.
後でこの栃尾あぶらげを使った料理の写真を追加します。

Slightly pan-fried to make the surface crispy and topped with chopped naga negi and katsuobushi, with some soy sauce poured over it.
表面をカリカリにするため軽く焼き、みじん切りの長ネギと鰹節を乗せ、しょう油を少しかけました。

Seppu Matsuri (Festival)/雪譜祭り(せっぷまつり)

On February 19, the 27th Seppu Matsuri was held in the Fureai Hiroba (Square) in front of Suzuki Bokushi Memorial Hall near Bokushi Dori (Street) in the Shiozawa area of Minami Uonuma city, in memory of Suzuki Bokushi, who wrote the book Hokuetsu Seppu in the Edo period.
2月19日、江戸時代に北越雪譜(ほくえつせっぷ)という本を書いた鈴木牧之(すずきぼくし)をしのんで、南魚沼市の塩沢地域にある「牧之通り」(ぼくしどおり)に近い鈴木牧之記念館の前の「ふれあい広場」で、第27回「雪譜(せっぷ)まつり」が行われました。


Luckily, it was a sunny day.
運良く、晴れの日でした。


About 500 candles were lit.
約500本のろうそくに火が点けられます。


In the "mochi maki" (rice cake scattering) session, I got a total of 12 mochi!
餅まきでは、餅を全部で12個取りました。

Note that in mochi maki, round mochi, not rectangular ones, are usually scattered.
餅まきでは、普通、角餅ではなく丸餅がばらまかれます。

I bought four "Hanjuku Cheese" from Aoki Shoten.
青木商店の「半熟チーズ」を4つ買いました。

A favorite of my son's.
息子の好物です。

Enoki Koori (Enoki Ice)/えのき氷

"Enoki koori" (lit. enoki ice) is an invention of Hirofumi Ato of JA Nakano City.

Here is a brief description of how to make "enoki koori" properly:
Prepare 300 g enoki and 400 g water.
Finely chop enoki, put in a blender, add water, process for 30 seconds into paste.
Transfer to a pot, and simmer for 60 minutes while stirring regularly to prevent burning and boiling over, until 700 g paste reduces to 500 g.
Transfer to 2 ice trays and put in the freezer.
Put "enoki koori" in miso soup, simmered dishes, curry, stir-fries, tempura batter, and so on. Use up to 3 cubes per day per person.

「えのき氷」とは、JA中野市の阿藤博文(あとうひろふみ)さんが発明したものです。

「えのき氷」の正しい作り方を少し説明します。
えのきを300 g、水を400 g用意します。
えのきを細かく刻み、ミキサーに入れ、水を足し、30秒間ミキサーにかけてペースト状にします。
鍋に移し、焦げ、ふきこぼれを防ぐため、かき混ぜながら、700 gが500 gに減るまで60分間、煮詰めます。
2つの製氷皿に移し、冷凍庫に入れます。
「えのき氷」はみそ汁、煮物、カレー、炒めもの、天ぷらの衣などに入れます。1人1日3個まで使えます。

Since I learned of enoki koori, I've wanted to make some myself, but simmering for a whole hour while stirring is such a daunting task! Today, I hit on a good idea. Here is a report on what I did to make some enoki koori.

えのき氷のことを知ってから、自分で作りたいと思っていましたが、かき回しながら、丸1時間も煮込むというのは大変な作業です!今日、いい考えが浮かびました。私のえのき氷の作り方を紹介します。

I had gotten a bag of substandard enoki from an enoki producer, and put it in the freezer.
えのき生産者から規格外のえのきを1袋もらっていて、冷凍庫に入れてありました。

I decided to heat one half in the toaster oven and the other half in a frying pan.
半分をオーブントースターで、もう半分をフライパンで加熱することにしました。

I put the lid on the pan, and the enoki was cooked for less than three minutes.
フライパンに蓋をしました。えのきは3分を経たないうちに火が通りました。

I set the timer of the toaster oven to 8 minutes.
オーブントースターのタイマーは8分にセットしました。

Obviously, cooking in a frying pan is more efficient than in a toaster oven.
明らかに、オーブントースターよりフライパンで火を通したほうが効率的です。

I added the enoki cooked in the toaster oven to the frying pan. I heated the enoki for another 2 minutes.
オーブントースターで火を通したえのきをフライパンに足しました。もう2分、えのきを加熱しました。

The enoki weighed 450 g. It was 600 g before cooked.
えのきの重さは450 gでした。火を通す前は600 gでした。

I put the enoki in the blender, and pressed the flash button, but the blade wouldn't rotate. So, I added 50 ml hot water.
えのきをミキサーに入れ、フラッシュボタンを押しましたが、刃が回転しませんでした。そこで、お湯を50 ml足しました。


Then, I added another 50 ml.
次に、また50 ml足しました。

Then, I added still another 25 ml. Now the enoki looked thoroughly processed.
次に、さらに25 ml足しました。これで、完全にできたようです。

I transferred some enoki to an ice tray and the rest in an I-wrap bag.
製氷皿に移し、残りはアイラップに入れました。

Done!
完成!

I succeeded in making 450 + 50 + 50 + 25 = 575 g enoki koori from 600 g fresh enoki.
生のえのき600 gからえのき氷を450 + 50 + 50 + 25 = 575 g作ることができました。

My Style of Miso Ramen/自分流の味噌ラーメン

For supper tonight, I made ground pork and cabbage stir-fry and my style of miso ramen.
今日の夕飯には、豚の挽き肉とキャベツの炒め物と、自分流の味噌ラーメンを作りました。

Stir-fry:
200 g ground pork
1/4 cabbage

1 tsp instant dashi
1 tbsp soy sauce
1 tbsp sugar
2 tbsp miso

炒め物:
豚の挽き肉 200 g
キャベツ 1/4

出汁の素 小さじ1
しょう油 大さじ1
砂糖 大さじ1
味噌 大さじ2


I hate miso ramen with too many toppings in overly salty and fatty broth. My style of miso ramen is quite simple.
私は塩辛過ぎ、脂っこ過ぎのスープとトッピングの多すぎる味噌ラーメンが嫌いです。自分流の味噌ラーメンはとてもシンプルです。

The broth was:
1,600 ml water
2 tsp instant dashi
50 ml soy sauce
50 ml mirin
5 tbsp miso
200 g pork
Green part of naga negi

スープは、
水 1,600 ml
出汁の素 小さじ2
しょう油 50 ml
みりん 50 ml
味噌 大さじ5
豚肉 200 g
長ネギの青い部分

Almost all miso ramen broths contain garlic and ginger, and are very salty.
殆どの味噌ラーメンのスープにはニンニクと生姜(しょうが)が入っていて、また、とても塩辛いです。

Ebi Fries/エビフライ

Today, all of a sudden, my daughter said she wanted to have ebi fries (prawns breaded and deep fried). She said she liked the tartar sauce that comes with the ebi fries served as part of school lunches at her elementary school.
今日は突然、娘がエビフライを食べたいと言いました。小学校で出るエビフライについてくるタルタルソースが好きだそうです。

So, I decided to make ebi fries for supper tonight. I went shopping to buy some frozen prawns. Luckily, I got a pack of 24 "white ebi" for 580 yen.
夕飯にエビフライを作ることにしました。冷凍のエビを買いに行きました。運良く、24匹のホワイトエビを1パック、580円で買えました。

I dusted each ebi with wheat flour.
エビをそれぞれ小麦粉でまぶしました。

Then, I added two eggs and some water in the bowl containing the flour. I beat the eggs thoroughly. This is a trick I learned recently.
次に、小麦粉の入ったボールに卵2個と水を少しを入れました。卵をよく溶きました。これは最近知ったコツです。

This way, you can coat each ebi with panko (Japanese bread crumbs) thoroughly.
こうすることで、えびにパン粉をよくつけることができます。

The ebi are ready for deep-frying.
エビを揚げる準備ができました。

I pan-fried the beaten egg-and-flour mixture with some oil.
溶いた卵と小麦粉を混ぜたものは少しの油で焼きました。

My daughter asked if I would post about these ebi fries on my blog, and I said yes. She asked me to take a photo of her plate.
娘はこのエビフライをブログに載せるのかどうかと尋ねるので、そうだよ、と言うと、自分のお皿を写真に撮ってと頼まれました。

Shredded cabbage, three ebi fries, french fries, home-made tartar sauce, and some of the pan-fried egg mixture.
キャベツの千切り、エビフライ3つ、フライドポテト、自家製タルタルソース、フライパンで焼いた卵。

Ebi fries and tartar sauce really go very well together.
エビフライとタルタルソースは本当によく合います。

Tsukune Nabe, Udon Suki, and Tomato Nabe in a Single Nabe/つくね鍋とうどんすきとトマト鍋を一つの鍋で

For supper tonight, I made what I would call a "dream nabe". I mean, I wanted to have tomato nabe for supper, but I also wanted to have udon suki, and I also wanted to have tsukune (ground meat balls). I thought for a while, and hit upon a good idea: First make udon suki with tsukune, and then add some canned tomato to turn the udon suki into tomato nabe. I thought it was a fabulous idea, and I told my daughter about it. My daughter replied, rather dryly, "Anyone could think of that."
今日の夕飯には、「夢の鍋」と言うべき鍋を作りました。夕飯にトマト鍋を作りたかったのですが、うどんすきも食べたいし、つくねも食べたいと思いました。しばらく考えて、いい考えが浮かびました。まずは、つくね入りのうどんすきを作って、それからトマトの缶詰を入れて、うどんすきをトマト鍋に変える、ということです。素晴らしい考えだと思って、娘に話すと、娘は、冷淡に「それは誰でも考えつくね」と答えてくれました。

I made six kinchaku (purses), also called takara bukuro (treasure bags), using these high-quality kiri mochi (rectangular, pre-cut rice cakes).
次の高品質の切り餅を使って、巾着(宝袋とも言う)を6個作りました。


The "I-wrap" bag contains frozen enoki. Enoki freezes very well. I used ground pork, not ground chicken, to make tsukune this time.
アイラップには冷凍えのきが入っています。えのきはよく冷凍が効きます。今回は、鶏の挽き肉ではなく、豚の挽き肉でつくねを作りました。

I first simmered daikon, carrot, and thick portions of Chinese cabbage, like I usually do.
まずは、いつもの通り、大根とニンジンと白菜の厚い部分を煮ました。

First, my family enjoyed having udon suki. The udon was frozen Sanuki udon.
まずは、うどんすきを味わいました。うどんは冷凍の讃岐うどんです。

Then, I declared that I would put one can of whole tomatoes.
そして、私はホールトマトを一缶入れると宣言しました。

Needless to say, I was very satisfied with my "dream nabe".
言うまでもなく、自分の「夢の鍋」にとても満足しました。

Edited to add: My daughter commented that she preferred chicken tsukune, and I agreed with her.
追記: 娘は鶏のつくねのほうがいいと言いましたが、私もそう思います。

Shrimp Head Nabe on Setsubun/節分に海老の頭の鍋

Shrimp heads have nothing to do with Setsubun. Today, I bought two packs of amaebi (sweet shrimp) heads, thinking that I would use them to make miso soup. My wife later told me she couldn't think of what to make for supper tonight, so I suggested that she make shrimp head nabe.

海老の頭は節分と何の関係もありません。今日、味噌汁を作るのに使おうと、甘エビの頭を2パック買いました。妻が後で、今夜の夕飯に何を作ったらいいか思いつかないと言うので、海老の頭で鍋を作ったらどうか、と言いました。

I was born and bred in Tokyo, so the beans to throw on Setsubun are soy beans. The people here in Niigata usually throw unshelled peanuts.
私は東京で生まれ育ったので、節分に撒く豆は大豆です。新潟の人たちは普通、殻つきの落花生を撒きます。

Ama ebi (sweet shrimp) head nabe:
甘エビの頭の鍋:

The broth was miso-based, not soy sauce-based. My wife said she also added some instant dashi. The nabe also contains some thinly sliced pork.
妻は、出汁の素も少し入れたと言ってました。汁は、しょう油ベースではなく、味噌ベースです。鍋には薄切りの豚肉も少し入っています。

We also had eho maki (lit. lucky direction rolls). Having eho maki on Setsubun used to be a custom in Osaka, but has become very popular in other parts of Japan, mainly due to commercialism...
恵方巻きも食べました。節分に恵方巻きを食べるのは大阪の習慣でしたが、日本の他の地域でも一般的になってきました。商業主義のせいですが・・・。
