Supper Last Night/昨日の夕飯

For supper last night, we had somen and the leftover pan-fried pork slices with onion slices and sesame sauce.
昨日の夕飯には、そうめんと、残りの焼いた豚肉をオニオンスライスとごまだれで食べました。
The sesame sauce was:
4 tbsp white sesame seeds, ground
2 tbsp soy sauce
2 tbsp vinegar
1 tsp sugar
ごまだれは、
白ゴマ 大さじ4をすったもの
しょう油 大さじ2
お酢 大さじ2
砂糖 大さじ1
You must have a lot of pork to survive the hot and HUMID summer in Japan!
日本の蒸し暑い夏を乗り切るには豚肉をいっぱい食べないと!

I served the somen in a bamboo sieve.
そうめんは竹ざるに入れて出しました。
Somen is usually served in a bowl of cold water (or iced water).
そうめんは普通、冷水(または氷水)の入ったボールに入れて出されます。

I added some (about 1 tsp) vinegar and a few ice cubes in my usual dipping sauce (5:1:1 mixture of dashi, soy sauce, and mirin).
私は、いつもの麺つゆ(出汁、しょう油、みりんを5:1:1で合わせたもの)に、お酢を少し(小さじ1程度)と氷を2、3個入れました。

Aji Fry and Ham Katsu/アジフライとハムカツ

My today's petit zeitaku (small luxury) is...
今日の私のプチ贅沢は、...
One aji fry (95 yen) and one ham katsu (90 yen).
アジフライ(95円)一枚とハムカツ(95円)一枚です。

I went to buy them before noon to have them for lunch.
昼前に買いに行って、昼食に食べました。

I had my aji fry with ponzu. The aji fry was very good!
アジフライはポン酢で食べました。とても美味しかったです!
And, I had my ham katsu with "sauce". As I mentioned previously, the term sauce, when used alone, usually means Worcester sauce. It can also mean chuunou sauce (medium thick sauce) or tonkatsu sauce. I personally like chuunou and tonkatsu sauces. Chuunou sauce is shown in the first photo.
そして、ハムカツはソースで。前に言ったように、ソースという言葉は単独で使われると、普通は、ウースターソースのことです。また中濃ソースや豚カツソースのことを指すこともあります。私は個人的には中濃ソースと豚カツソースが好きです。最初の写真に載っているのは中濃ソースです。
The supermarket's flyer says it's atsu-giri (thickly cut) ham katsu. Really thick and delicious! That reminds me of episode 88, Ham Katsu, of the Shinya Shokudo manga, in which a customer says that he has had ham katsu for lunch for the first time in 30-odd years. He says the ham was a thick slice, and a good one. He is of the opinion that the ham in ham katsu should be thin.
スーパーのチラシには、厚切ハムカツと書いてありました。本当に厚くて、美味しかったです!漫画「深夜食堂」の第88話「ハムカツ」を思い出します。或るお客が三十数年ぶりにランチでハムカツを食べたが、それが厚切りで、いいハムだったそうです。その客は、ハムカツのハムは薄いべきだという意見です。
In episode 97, Deep-fried items, a customer remarks, "After all, aji fries are best with sauce!" This guy also has tempura with sauce. He is from Yakayama in Kansai (Western Japan). To the surprise of the Kanto (Eastern Japan) people, there are many Kansai people who have tempura with sauce.
第97話「揚げもの」では、お客が「やっぱアジフライにはソースですよね!」と言います。この男は天ぷらもソースで食べます。関西の和歌山の出身だそうです。関東の人には驚きですが、関西では天ぷらをソースで食べる人が多いです。
I was supposed to have these leftover pan-fried pork slices for lunch.
この焼いた豚肉の残りを昼ごはんに食べる予定でした。

Japanese-Style Onion Slice Salad/和風オニオンスライスのサラダ

I made onion slice salad as part of supper tonight.
今日の夕飯にオニオンスライスサラダを作りました。
I just wanted to tell you that dried bonito shavings go very well with ponzu and mayonnaise.
鰹節はポン酢とマヨネーズとよく合うということを知らせたかっただけです。

Inari Zushi and Temaki Zushi/稲荷寿司と手巻き寿司

For supper tonight, I made two types of sushi, inari zushi and temaki zushi. As usual, don't expect to see a fabulous dinner in my blog.
In fact, I often make these types of sushi because I want to use up leftover rice, and tonight's supper was no exception.
今日の夕飯には二種類の寿司、稲荷寿司と手巻き寿司を作りました。いつも通り、私のブログで素晴らしい夕食を見られると期待しないで下さい。
この二種類の寿司を作るのは、残りのご飯を使い切りたいからということが多く、今晩の夕飯も例外ではありません。

Like I previously said, I use this particular brand of seasoned abura age.
前に言ったように、味付けの油揚げはこのブランドを使っています。
All my family agree that this brand tastes the best. Needless to say, we have no affiliation with the manufacturer.
家族全員、これが一番美味しいという意見です。もちろん、私たちはこのメーカーとは何の関係もありません。

I made three types of temaki:
1. Canned tuna + Mayonnaise
2. Fake crab meat stick + Cucumber nukazuke stick + Chopped umeboshi + Shiso (perilla)
手巻きは三種類作りました:
1. ツナの缶詰+マヨネーズ
2. かにかま+スティック状に切ったきゅうりのぬか漬け+刻んだ梅干+シソ
3. Atsuyaki tamago
3. 厚焼き玉子
Inari zushi is still a favorite of my daughter's.
稲荷寿司は、いまだに娘が好きです。
No raw fish for tonight's supper!
今日の夕飯には生の魚はナシです!

Chuka Harusame Salad/中華春雨サラダ

I made chuka harusame (Chinese cellophane noodle) salad as part of supper tonight.
今日の夕飯に中華春雨サラダを作りました。
50 g cellophane noodles
1/2 carrot
1-2 cucumbers
10 fake crab meat sticks
Small amount of white sesame seeds
50-60 ml soy sauce
50-60 ml vinegar
4 tsp sugar
(Soy sauce, vinegar, and sugar ratio = 3:3:1)
1-2 tsp sesame oil
春雨 50 g
ニンジン 1/2本
きゅうり 1、2本
かにかま 10本
白ゴマ 少量
しょう油 50~60 ml
お酢 50~60 ml
砂糖 小さじ4
(しょう油、お酢、砂糖の割合=3:3:1)
ごま油 1、2杯


I, for one, like to have this salad with karashi (Japanese mustard).
私としては、カラシと一緒に食べるのが好きです。
We also had aji no hiraki and sanma no hiraki. (Four of us shared the two fish.)
アジの開きとサンマの開きも食べました(二尾の魚を四人で食べました)。
We will have the saba fillet and two salmon slices marinated in saikyo miso in the near future. Saiko miso is a type of shiro (white) miso.
サバとサケの西京漬けは近いうちに食べます。西京味噌は白味噌の一種です。

Yesterday, I bought a pack of sansho pods (mi-zansho) and a pack of salmon marinated in nanban sauce. Green sansho pods are available only around this time of year.
昨日は、実山椒(みざんしょう)1パックと鮭の南蛮漬けを1パック買いました。青山椒は一年のうち今頃しか手に入りません。
The salmon was very good just as I had expected.
鮭は予想通りとても美味しかったです。

We got a lot of cucumbers from my wife's father, so I made our favorite pickle.
義父からキュウリをたくさんもらったので、私たちの好きな漬物を作りました。
6 cucumbers, cut diagonally into 1 to 1.5-cm rounds.
150 ml mirin-style seasoning, which does not contain alcohol
150 ml vinegar
1 tsp salt
Let sit overnight.
キュウリ6本 斜めに切って、1~1.5 cmの輪切りにする。
みりん風調味料(アルコールが入っていない) 150 ml
お酢 150 ml
塩 小さじ1
一晩置く。

別のがここで見れます。塩の代わりに昆布を使いました。
And, here is my cucumber nukazuke:
そしてこれが私のキュウリのぬか漬けです。
They are rather salty because I pickled them for a whole day. I can only have a few slices a meal.
丸一日漬けたので、ちょっとしょっぱいです。一回の食事に数切れしか食べれません。

This morning, I decided to put some (about 50 to 60) of the sansho pods in my nukadoko.
First, remove thick stalks.
今朝、実山椒を少し(50~60個)ぬか床に入れることにしました。
まず、太い茎を取ります。
Boil for 1.5 min., drain, and soak in cold water.
1.5分茹でて、お湯を切り、冷水に漬けます。
The distinctive, intense smell filled the entire house!! I gave up the idea of adding them to my nukadoko, although sansho pods are a common ingredient to add to nukadoko for flavoring and disinfection. I put the sansho pods in an I-wrap bag and stored it in the freezer for later use.
独特な強い香りが家中に広まりました。ぬか床に入れることは止めました。実山椒は、香り付けと殺菌のためぬか床によく入れるものなのですが。アイラップに入れて、後で使えるよう冷蔵庫にしまいました。

Finally, the ice candy, Gari-Gari Kun, which is featured in Episode 76 of Volume 6 of the Shinya Shokudo manga.
最後に、漫画「深夜食堂」の第六巻の第76話に載っている「ガリガリ君」です。
Kyoho-flavored. Kyoho is a variety of grape called the King of Grapes in Japan. There are other versions of Gari-Gari Kun, like soda flavored one.
巨峰味です。巨峰とは日本でブドウの王様と呼ばれている品種です。ガリガリ君には、他にもソーダ味などがあります。

Souvenirs from Sado Island/佐渡島のおみやげ

The other other day, my daughter went to Sado Island on her graduation trip. Here are some of the souvenirs she bought for her family and relatives:
先日、娘が卒業旅行で佐渡島に行きました。家族や親戚に買ったお土産の一部です。

Sado is famous for its okesa gaki (< kaki = persimmon). 佐渡はおけさ柿で有名です。

This particular candy is very popular among elementary school pupils. Many buy several bags so that they can give several candies to each of their friends.
この飴は小学生にとても人気があります。多くの小学生が、友達にそれぞれ飴を幾つかあげられるよう、何袋も買います。

Final Notes (for Now) on Nukadoko and Nukazuke/ぬか床とぬか漬けに関する(今のところ)最後の注意点

Nukadoko requires daily maintenance. More specifically,

1. You must mix your nukadoko once a day in the winter (room temperature < 15C) and twice a day in other seasons.
2. You must keep your nukadoko in a temperature range of 20-25C. If the room temperature is above 25C, consider putting the nukadoko in the vegetable compartment of the refrigerator.
3. Keep your nukadoko at a salt concentration of around 7%, and keep it slightly less moist than miso. To do so, remove any excess water from your nukadoko, and replenish your nukadoko with nuka (rice bran) with 7% salt (for example, 100 g nuka plus 7 g salt) when necessary.
4. If you cannot take care of your nukadoko for a few days, put it in the refrigerator (< 5C).
5. If you want to stop nuka zuke (rice bran pickling) for a long time, say, one or two months, put your nukadoko in the freezer.

ぬか床には毎日の手入れが必要です。具体的に言うと、
1. 冬(室温<15度)では一日に一回、他の季節では一日に二回、ぬか床をかき混ぜる。
2. ぬか床は20~25度の範囲に保つ必要があります。室温が25度以上であれば、冷蔵庫の野菜室にぬか床を入れることを考慮して下さい。
3. ぬか床は塩分濃度を7%程度に保ち、また味噌より少し水分が少ない程度に保つ必要があります。そのためには、ぬか床から余分な水分を除去し、必要に応じて、7%の塩を含むぬか(100 gのぬか+7 gの塩)をぬか床に補充してください。
4. ぬか床を数日間、世話できない場合は、冷蔵庫(5度以下)に入れてください。
5. ぬか漬けを長期間(例えば、1~2ヶ月)中止したい場合は、冷凍庫に入れて下さい。

This morning, when I opened the lid, I immediately noticed paint thinner smell. I was a little upset, and checked the temperature of my nukadoko. It was 27C. I mixed it thoroughly, and put it in the vegetable compartment. At around 2 in the afternoon, I checked the nukadoko, and was relieved to find that the paint thinner smell was gone.
今朝、ふたを開けると、すぐにシンナーの臭いに気付きました。ちょっと動揺して、ぬか床の温度を測りました。27度でした。よく混ぜて、野菜室に入れました。午後2次頃、ぬか床を調べると、シンナーの臭いは消えていて、安心しました。

I hadn't expected that the nukadoko could get smelly so quickly. Last night, I checked the temperature, and it was 25C, and I thought it was in good condition.

ぬか床がこんなに早く臭くなるとは予想していませんでした。昨晩は温度を測り、25度で、いいコンディションだと思っていたのですが。

Today's Lunch/今日の昼食

My lunch is almost always some leftovers plus something extra, but today's lunch was a little different.
My discussion about aji with Sissi had made me want to have an aji ten (short for aji tempura) or aji fry, and quite luckily, I found aji ooba ten for sale on June 20 in Saturday's flyer. Ooba (lit. large leaf) is another name for shiso (green perilla).
私の昼食は殆ど毎日、残り物と何かプラスアルファですが、今日の昼食はちょっと違います。
Sissiさんとアジの話をして、アジ天かアジフライが食べたくなっていたのですが、ラッキーなことに、土曜日のチラシに「あじ大葉天」が6月20日の特売になっているのを見つけました。「大葉」(おおば)とは、青ジソの別名です。

I also bought a pack of "kinoko to toriniku no wafu spaghetti" (Japanese-style spaghetti with mushrooms and chicken) for 298 yen.

The umeboshi and additional green perilla (picked from a planter in my yard) are for Sissi (laugh).
梅干と青ジソ(庭のプランターから採った)はSissiさんのためです(笑)。
The aji ooba ten was good, so was the spaghetti.
あじ大葉天もスパゲティーも美味しかったです。
Today's lunch is a good example of what we call "petit zeitaku" (small luxury).
今日の昼食は、いわゆる「プチ贅沢」のいい例です。

Some Other Notes on Nukadoko and Nukazuke/ぬか床とぬか漬けに関する、他の注意点

I have decided to describe what I have done so far, rather than providing general notes on nukadoko and nukazuke.
ぬか床、ぬか漬けに関する一般的な注意点を述べるのではなく、これまでやってきたことを説明することにしました。

On the night of July 14, I put my nukadoko in the fridge, and on the morning of July 16, I took it out because the room temperature was below 25C.
6月14日の夜、ぬか床を冷蔵庫に入れ、6月16日の朝、室温が25C以下だったので、冷蔵庫から出しました。

Let me show you how to pickle two cucumbers. First, rub with salt or do itazuri. For information on itazuri, see the Jan. 14 post. (I didn't rub with salt or do itazuri.)
きゅうりを二本漬ける方法です。まず、塩でもむか、板ずりします。板ずりに関しては、6月14日の記事をご参照下さい(私はどちらもしませんでした)。

Place the cucumber on top of your nukadoko. Do not dig your nukadoko! If you did, you would allow air in.
ぬか床の上にきゅうりを載せます。ぬか床を掘らないで下さい。掘ると、空気が中に入ります。
Bury them by pressing on them.
押して埋めます。
Cover them with rice bran mash.
ぬかをかぶせます。
Pat the nukadoko until flat.
平らになるようぬか床を軽く叩きます。
I like lightly pickled cucumbers, so I usually pickle them for 4-8 hours. I pickled one cucumber for 24 hours once; it was too salty for me.
浅漬けのきゅうりが好きなので、普段は4~8時間漬けます。一度24時間漬けたことがありますが、塩辛過ぎました。

On the night of June 17, I checked the temperature of my nukadoko. It was 27C, and the room temperature was 27.5C. I put it in the vegetable compartment of the fridge. On the morning of June 18, my nukadoko fell to 11C.
6月17日の夜、ぬか床の温度を測ると、27Cでした。室温は27.5Cでした。ぬか床を冷蔵庫の野菜室に入れました。6月18日の朝、ぬか床は11Cまで下がっていました。

Partly because my nukadoko was a little soggier than it should be (I had failed to remove excess water sufficiently no matter how hard I tried), I decided to replenish my nukadoko, with 100 g iri nuka (roasted rice bran) and 7 g refined salt.
ぬか床が少し水っぽいこともあり(どんなに頑張っても、余分な水を十分に取れませんでした)、ぬか床に煎りぬかを100 g、精製塩を7 g足すことにしました。
I try to avoid touching my nukadoko with my bare hands as much as possible, not because hygiene reasons but because I don't want my hands to get stinky. So, I usually use a long spoon to mix my nukadoko.
ぬか床にはなるべく素手で触らないようにしています。衛生上の理由ではなく、手が臭くなるのが嫌なので。というわけで、普段は長いスプーンを使って、かき混ぜています。

Make the surface of the nukadoko flat. I have to use my right hand to this job. Wipe off the rice bran mash from the inner walls of the container, with paper towels or something. (I often omit this step.)
ぬか床の表面を平らにします。これは右手を使わないとできません。キッチンペーパーなどで、容器の内側のぬかを拭き取ります(私はやらないことが多いですが)。
