Kyuri no Kyuchan/きゅうりのキューちゃん

The main reason why I don't grow cucumbers in my rented field or in the tiny space around my house is that I get a lot of cucumbers from relatives when they are season.
The other day, I got so many of them I decided to make kyuri no kyuchan.
The recipe is almost the same as that I described here, except that I cooked the cucumbers in the microwave oven for a total of 3 + 2 = 5 minutes.
借りている農地や家の周りの狭いスペースできゅうりを育てない主な理由は、きゅうりが旬になると親戚から沢山きゅうりをもらうからです。
先日、いっぱいもらったので、きゅうりのキューちゃんを作ることにしました。
レシピはここに書いたのとほぼ同じですが、きゅうりを電子レンジで合計3+2=5分加熱しました。

Sadly, I am the only one in my family who likes home-made kyuri no kyuchan.
悲しいことに、家族のうち自家製のきゅうりのキューちゃんを好きなのは私だけです。

Edited to add:  I heated the cucumbers before adding other ingredients (ginger, soy sauce, sugar, and vinegar).
追記: きゅうりは他の具材(生姜、しょう油、砂糖、お酢)を入れるまえに加熱しました。

Supper on July 29/7月29日の夕飯

For supper last night, we had cold noodles and tempura.
I combined dashi, soy sauce, and mirin at a ratio of 4:1:1, and used it both as mentsuyu (dipping sauce for noodles) and tentsuyu (dipping sauce for tempura).
昨日の夕飯には麺と天ぷらを食べました。
出汁、しょう油、みりんを4:1:1で混ぜ、それを麺つゆと天つゆとして使いました。


Note that different ratios may be used for these two dipping sauces.  For example, one person suggests a 3.5:1:1 ratio for mentsuyu and a 4:1:1 ratio for tentsuyu.  Another suggests a 7:1:1 ratio for mentsuyu and a 5:1:1 ratio for tentsuyu.
It's summer and hot, so I added some ice cubes to the mentsuyu bowl.
この二種類の「つゆ」に別々の割合を使うこともあります。例えば、或る人は麺つゆには3.5:1:1の割合、天つゆには4:1:1の割合を薦めていますし、別の人は麺つゆには7:1:1の割合、天つゆには5:1:1の割合を薦めています。
夏で暑いので、麺つゆのお椀には氷を少し入れました。

Somen and hiyamugi are noodles of choice in the summer, but this time, we had to use up the udon noodles that were past their expiration date.
夏は麺と言ったら、素麺(そうめん)か冷麦ですが、今回は、賞味期限切れのうどんを食べました。

We also had to use up the kabocha (not a bocchan kabocha) my father had sent us.
また、父が送ってくれたかぼちゃ(ぼっちゃんかぼちゃではない)も使い切りました。


Many of the pieces were eaten by three of us (my children and me) before supper time, as you can see from the empty space on one of the plates.

I also made satsuma imo tempura (imoten for short).
サツマイモの天ぷら(略して「いも天」)も作りました。


Shown on the right is a bowl of tenkasu (also called agedama) that I made with leftover tempura batter intentionally, not as a byproduct of tempura making.
右に見えるのは、残った天ぷらの衣で意図的に(天ぷら作りの副産物ではなく)作った天カス(揚げ玉とも)です。

Tomatoes and Cherry Tomatoes/トマトとミニトマト

I planted ten different varieties of tomato and cherry tomato in my rented field.
私は、借りている農地にトマトとミニトマトを10品種も植えました。

Bocchan Kabocha Tempura/坊ちゃんかぼちゃの天ぷら

The other day, I got a box of tomatoes and other vegetables from my father, including one bocchan kabocha and three bei nasu (variety deriving from Black Beauty in the United States).
先日、父からトマトなどの野菜を一箱(ひとはこ)もらいました。坊ちゃんかぼちゃ一個と米ナス(米国のBlack Beautyに由来する品種)が三つ入っていました。


Bocchan kobocha is small (about 500 g in weight), and contains three to four times as much protein, beta-carotene, and sugar as regular kobocha.
坊ちゃんかぼちゃは小さくて(重さ約500 g)で、普通のかぼちゃと比べて、タンパク質、ベータカロチン、糖質が3~4倍も入っています。
Compare the size with my Shigefusa kitaeji petty knife with a blade length of 18 cm.
刃の長さ18 cmの重房鍛地ペティナイフと大きさを比べてください。

I decided to make tempura with the kobacha.
このかぼちゃで天ぷらを作ることにしました。

First, cut into quarters.
まず1/4に切ります。


Then, cut into 5-8 mm thick slices.
それから、58 mm厚に切ります。


For kobocha tempura, the batter should be thicker than usual.
かぼちゃの天ぷらでは、衣は通常より濃くします。


The same is true of satsumaimo (sweet potato) tempura.  Thick batter results in thick coating, which protects the ingredient while it is being deep-fried for a relatively long time.
サツマイモの天ぷらでも同様です。濃い衣は厚いコーティングとなり、具材を比較的長時間揚げている間、具材を保護します。

Deep-fry at a low temperature of 160C for 3 min.
低温(160C)で3分、揚げます。

After I deep-fried these 24 pieces, the batter almost ran out.  Instead of adding more flour and water, I used up the batter by making tempura with less batter.
24枚揚げた後、衣はほとんどなくなりましたが、小麦粉と水を足すのではなく、衣の少ない天ぷらを作って、衣を使い切りました。

To my surprise, all these pieces were eaten by my son while I was taking a shower.
驚いたことに、これらの天ぷらは私がシャワーを浴びている間に、息子に食べられてしまいました。

Apricots Simmered with Sugar, Part III/あんずの砂糖煮、パート3

For my third pack of apricots, I tried another method:  Put apricots in an I-Wrap bag, add sugar, and heat in a microwave oven for 3 + 2 minutes.  The resultant apricots were much more sour than those simmered in a pot.  I really liked them!
三つ目のあんずのパックでは、別の方法を試しました:あんずをアイラップに入れ、砂糖を入れ、電子レンジで3+2分加熱する、という方法です。そうしてできたあんずは、鍋で煮たあんずよりずっと酸っぱかったです。本当に美味しかったです。

I bought two more packs today, and processed them in the same way:
今日は、また2パック買って、同じ方法で処理しました。

Nasu no Age Bitashi/なすの揚げ浸し

As part of supper tonight, I made nasu no age bitashi.
Nasu = Eggplant
Age = Deep-fried
Bitashi < Hitashi, which derives from the verb hitasu (to soak).

I have already written about this dish here, but in this post, I erroneously called the dish nasu no nibitashi.  I later found that this dish is called nasu no age bitashi.

今日の夕飯には、なすの揚げ浸しを作りました。
なす = Eggplant
揚げ = Deep-fried
浸し(びたし) < 浸し(ひたし)、「浸す」という動詞から

この料理についてはすでにここに書きましたが、ここでは、この料理を誤って「茄子(なす)の煮びたし」と呼んでいました。後で「茄子(なす、ナス)の揚げ浸し」と呼ばれていることを知りました。

First cut in half lengthwise, and then make shallow diagonal cuts, make similar cuts vertical to the first, and soak in water to remove aku (harshness).  Dry with paper towels.
まず縦に半分に切って、斜めに浅い切り込みを入れ、次に同様にその切り込みとは垂直に浅い切り込みを入れ、水に漬けて、アクを取ります。キッチンペーパーで水を取ります。


Deep-fry at 180C for 2-3 min.
180Cで2~3分揚げます。


Transfer to a container and add mentsuyu.  Chill in the fridge before serving.
容器に移し、麺つゆを入れます。冷蔵庫で冷やしてから食べます。


If you can't find store-bought mentsuyu, combine dashi, mirin, soy sauce at a ratio of 4-7:1:1.
市販の麺つゆがなければ、出汁、みりん、しょう油を4~7:1:1の割合で混ぜます。

Apricots Simmered with Sugar, Again/あんずの砂糖煮、再び

I have already posted about this recipe here, but it's so good I can't resist posting about it again this year.
This is the second time I have made this dish this year.  For the first time, I removed the stone from each apricot, and somehow, I was a little disappointed with the lack of stones, so for the second time, I intentionally left the stones unremoved.
このレシピは既にここに書きましたが、とても美味しいので、今年も書きたいと思います。
今年この料理を作るのはこれで二回目なのですが、一回目は種を取りました。なぜか種がないとちょっとがっかりしたので、二回目はわざと種を残しました。

14 apricots, about 770 g in total.
杏(杏子、あんず、アンズ)14個、全部で約770 g


Start making a cut along this vertical line, and continue to make the cut all around the fruit.
この垂直の線に沿って切り始め、一周切り続けます。 


Twist and open in half.
ひねって、半分づつにします。


Put in an enameled pot, and add sugar.  (Add a very small amount of water, if required.)
ホーロー鍋に入れ、砂糖を入れます。(必要に応じて、水をごく少量足します。)


I added 250 g sugar (30% of the apricots in weight)
私は250 g (あんずの重さの3割)入れました。

Simmer on very low heat.  Once enough water has come out of the apricots, you can change to low heat.  Turn off the gas in a few minutes.

ごく弱火で煮ます。水が十分出たら、弱火にできます。数分後、火を止めます。


My family like to have it with yogurt.
私たち家族はヨーグルトと一緒に食べるのが好きです。

Whetstone, etc./砥石など

I finally brought a brand-new whetstone, together with a set of rust erasers (center) and a set of bottle of camellia seed oil and oil pot (left).
やっと新しい砥石、サビ取りのセット、椿油と油つぼのセットを買いました。

Using these items, I managed to regain the beauty of my Shigefusa kitaeji petty knife.
これらを使って、重房鍛地ペティナイフの美しさをどうにか取り戻しました。

Not completely, though.
完璧ではないですが。
But, after I used the knife to cut two tomatoes, three furuzuke cucumbers, some furuzuke daikon, and some young ginger, the knife already had these stains.
でも、この包丁を使って、トマト2個、古漬けのきゅうりを3本、古漬けの大根、新生姜を切ったら、もうこんな汚れがついてしまいました。
It is so tough to keep a traditional Japanese knife beautiful.
日本の伝統的な包丁をきれいに保つのは大変です。

Edited to add: I got this whetstone and the other items online from Tachibana Sangyo, a wholesaler located in Yoita town, Nagaoka city, which deals in carpenter tools produced in Echigo (former Niigata) and elsewhere. I've been quite impressed with many of the high-grade planes, chisels, and other carpenter tools shown on their site.

Michi no Eki (Roadside Station) "Yuki Akari"/道の駅「雪あかり」


Today, July 8, a grand opening was held for the Roadside Station (Michi no Eki), "Yuki Akari".
今日7月8日、道の駅「雪あかり」がグランドオープンしました。


Yuki Akari is located on National Highway Route 17.

The mochi was also offered for free, either with azuki an or kinako.  I wanted to have some, but I gave up because a long line of people had been formed while I was watching the mochi tsuki performance.
お餅も、あずき餅かきなこ餅として無料で振舞われました。私も食べたかったのですが、が、餅つきを見ている間に、長い行列ができていたので、あきらめました。

Probably the biggest event of the grand opening for many, especially children, was a skit by the comedy duo, "Hiking Walking".  The guy on the right in the photo, who raises his hand, is Suzuki Q Taro, who comes from the Shiozawa area of Minami Uonuma city, where the roadside station is located.
多分、多くの人(特に子供たち)にとって一番大きなイベントは、お笑いコンビ「ハイキングウォーキング」によるコントでしょう。写真右側の、手を上げている人は、鈴木Q太郎と言って、この道の駅がある南魚沼市の塩沢地域の出身です。

Anyone who made a purchase in the produce stand was entitled to draw a lot outside the stand just by showing their receipt (although the flyer said that those customers who made purchases of 1000 yen or more could draw a lot).  I drew a lot and got this bottle of honey.
野菜の直売所で何か購入した人は誰でも、レシートを見せるだけで直売所の外で、くじを引けました(チラシには、1000円以上買った人がくじを引けると書かれていましたが)。私もくじを引いて、このハチミツのもらいました。
