Humble Okonomiyaki/質素なお好み焼き

I had a considerable amount of tenkasu (also called agedama) in the freezer, and I wanted to use it up before the New Year.  I measured it and it was 120 g in total.  Tenkasu is a byproduct of making tempura, but you can make tenkasu intentionally, and you can also buy premade tenkasu in a supermarket.  I don't remember how many tempura making sessions I did to get this amount of tenkasu.  I guess the tenkatsu was a result of making tempura for supper for at least five times.
冷凍庫に天かす(揚げ玉)がかなりあり、新年を迎える前に使い切りたいと思いました。測ると、全部で120 gありました。天かすは天ぷらを作った時にできる副産物ですが、意図的に作ることもできるし、出来合いの天かすをスーパーで買うこともできます。これだけ天かすができるまで何回天ぷらを作ったか覚えていませんが、少なくとも5回は夕飯に天ぷらを作った時にできた天かすだろうと思います。 
So, I made humble okonomiyaki for supper last night.
120 g tenkasu
60 g leftover store-bought okonomiyaki mix
120 g komeko (rice flour)
120 g hakurikoko (cake flour)
60 + 120 + 120 = 300 g
1 egg
300 ml water
1 pack dried shrimp
300 g cabbage, coarsely chopped

I made four okonomiyaki, using two 18-cm dia. frying pans.
と言うわけで、昨日の夕飯には質素なお好み焼きを作りました。
天かす 120 g
残っていた市販のお好み焼き粉 60 g
米粉 120 g
薄力粉 120 g
60 + 120 + 120 = 300 g
卵 1個
水 300 ml
キャベツ 粗みじん 300 g

直径18 cmのフライパンを2つ使って、お好み焼きを4つ作りました。

Note:  The ratio of (flour + water) to cabbage should be about 1:1, but I made a mistake of mixing the flour + water and cabbage at a ratio of 2:1.  I don't know why, but the okonomiyaki turned out fine.
注: (粉+水)とキャベツの割合は、およそ1:1にすべきですが、私は粉+水とキャベツを2:1で混ぜてしまいました。なぜか分かりませんが、お好み焼きはうまくできました。

It may be hard to see from the photo, but I sprinkled a generous amount of ao nori first, followed by a generous amount of katsuobushi (dried bonito shavings), chuunou sauce, and ketchup.  No mayonnaise for me.  Humble okonomiyaki by any standard, but I was satisified with it.
写真では見にくいですが、まず青海苔を沢山ふり掛け、それから鰹節を沢山ふり掛け、それから中濃ソースとケチャップを掛けました。私はマヨネーズは使いません。どう見ても、質素なお好み焼きですが、私は満足しました。

Making Wari Boshi Daikon/割り干し大根作り

I made wari boshi daikon, using one daikon.  I first cut the daikon in half crosswise, and then cut each half into long strips of 1 x 1 cm.  It took me 4-5 days to dry the daikon completely indoors.
大根を一本使って、割り干し大根を作りました。まず大根を横に半分に切って、それぞれ1 x 1 cmに長く切りました。室内で完全に干すのに4、5日かかりました。
They were 95 g in total.
全部で95 gでした。
I made harihari zuke again, using less soy sauce and vinegar this time (75 ml each) and less sugar (about 25 g).
またはりはり漬けを作りました。今回は、しょう油とお酢の量を減らし(各75 ml)、砂糖も減らしました(約25 g)。

Very good!  I think I'll dry other daikon, too!
とても美味しいです。他の大根も干そうと思います。

Takohiki no Ryu no Tororo Meshi/蛸引きの竜のとろろ飯

We had some (about 150 g) of the yamato imo left in the fridge, and I wanted to try the tororo meshi mentioned in Episode 3 of the TV drama, Osen.
大和芋の残りが少し(150 gほど)冷蔵庫に残っていたので、テレビドラマ「おせん」の第三話に出てくるとろろ飯を試したいと思いました。


On December 23, I asked my wife to make simmered fish (righteye flounder) as part of supper that night, so I could make the tororo meshi, using the leftover broth today.
12月23日、夕飯に煮魚(カレイ)を作ってくれるよう妻に頼みました。今日、残りの汁を使って、そのとろろ飯を作れるように、です。
The original recipe (Japanese only) calls for 300 g jinenjo (wild mountain yam) and 500 ml broth from simmered fish, but I  decided to mix 150 g yamato imo and 150 ml broth.
元のレシピでは、自然薯が300 gに煮魚の汁を500 ml使っていますが、私は150 gの山芋に150 mlの汁を合わせました。 
I made mugi meshi (rice cooked with barley), following the rice to barley ratio of 7:3, which is called for by the recipe.
レシピに書かれた割合(米7、麦3)で麦飯を作りました。 
Unfortunately, my son said that he was a little disappointed because he liked the tororo to be less soupy.
残念なことに、息子は少しがっかりしたと言いました。とろろは汁っぽくないほうが好きだからだそうです。

I brought all the other dried persimmons to the kitchen, wondering what to do with them.  I searched the Internet for an answer.
残りの干し柿を全部、台所に持って来て、どうしようか考えました。ネットで答えを探しました。
Eureka!  Freezing persimmons will remove astringency from them!  I put the permissions in the freezer right away.  Today, about one week later, I asked my son if he wanted to try one.  Of course, I told him about the possible risk!  My son had it, and said it was good!  He soon took two others out of the freezer and had them, too.

見つかりました!柿を冷凍すると、渋が抜ける!すぐに柿を冷凍庫に入れました。約一週間後の今日、息子に試してみないかと尋ねました。もちろん、リスクは説明しました!息子は食べ、美味しいと言いました。すぐに冷凍庫からまた二つ出して、食べました。
I'm really glad that I didn't throw them away.
NOTE:  If you freeze fresh astringent persimmons, it will take one month or longer until the astringency is removed from them.
捨てなくて、本当に良かったです。
注: 生の渋柿を冷凍する場合は、渋が抜けるのに一ヶ月以上かかります。

Le Lectier/ルレクチエ

Today, I have finally bought a pack of three le Lectier pears for 398 yen.  (I have waited for this time to come!)
今日はやっと、ルレクチエ3個パックを398円で買いました(この時が来るのを待ってました!)

One important characteristic I learned from this webpage (Japanese only) is that, unlike with apples, salt water is not effective in preventing this pear from discoloration.  Another is that the skin of this pear is thin, so you can eat it without peeling.
このウェブページで知った重要な特徴は、りんごと異なり、塩水を使ってもこの梨の変色は止められないこと、ともう一つは、この梨の皮は薄いので、皮をむかなくても食べられることです。

Chicken Yuan Yaki/鶏の幽庵焼き

Yuan yaki refers to a yakimono (grilled dish) made by first marinating slices of fish, for example, in a mixture of soy sauce, mirin, and sake (for example, equal amounts of them), usually plus slices of yuzu (or other citrus fruit), and then grilling.  It is said that yuan yaki was invented by Kitamura Yuan, a master of tea ceremony in the Edo period.
幽庵焼き(幽安焼き、柚庵焼き、祐庵焼き、ゆうあんやき)は、焼き物の一種で、魚の切り身などをしょう油、みりん、お酒(例えば、全て同量)、さらに柚子(または他の柑橘系果物)のスライスを混ぜたものに漬け込んでから、焼いた料理です。幽庵焼きは、江戸時代の茶人、北村幽庵が発明したものと言われています。

I asked my wife to make chicken yuan yaki.
Ingredients:
1 (approx. 300 kg) chicken breast (or thigh)
1/2 yuzu, sliced
2 tbsp each of soy sauce, mirin, and sake

1.  Marinate chicken in the mixture for 30 min. or longer.
2.  Pan-fry with the skin side first.
妻に、鶏の幽庵焼きを作ってくれるよう頼みました。
材料:
鶏の胸肉(腿肉) 1枚(約300 g)
柚子 半分、スライスする
しょう油、みりん、お酒をそれぞれ大さじ2

1.  鶏肉を30分以上、漬け込む。
2.  フライパンで皮から先に焼く。

One big difference is that Kewpie Mayonnaise contains yolks only while Kewpie Half contains whole eggs.
大きな違いは、キューピーマヨネーズには卵黄だけ、キューピーハーフには全卵(ぜんらん)が入っていることです。

Kewpie Mayonnaise has 100 kcal per 15 g, while Kewpie Half, as the name implies, has 50 kcal per 15 g.
キューピーマヨネーズは15 g当たり100 kcalで、キューピーハーフは名前の通り、15 g当たり50 kcalです。
I happen to be a fan of Kewpie Mayonnaise.  (Kewpie Half is not half as good!)  Kewpie, which released mayonnaise in 1925 for the first time in Japan, holds a dominant market share in Japan (about 60% according to some sources), followed by KENKO (yolk-only mayo) and Ajinomoto (whole egg mayo).
私はキューピーマヨネーズのファンです(キューピーハーフは全然美味しくないです!)。1925年に日本で初めてマヨネーズを発売したキューピーは日本では圧倒的なシェアを持ち(幾つかのサイトによれば6割程度)、ケンコー(卵黄のみ)、味の素(全卵)と続きます。

Nezumi Daikon/ねずみ大根

The other day, I got a call from my father, who said he would send us another box of foodstuffs.  I asked him to include shougoin daikon if he had any left.  The box contained one shougoin daikon, as well as two other smaller daikon.  I thought they were nezumi (lit. mouse, rat) daikon.  I called my father to thank him and asked what the small daikon were.  I was right.  They were nezumi daikon.
For comparison, I took a photo of the two varieties of daikon with one aokubi daikon (top).
先日、父から電話があり、また食料を1箱送ってくれると言うので、もし聖護院大根が残っていたら、くれるように頼みました。届いた箱には聖護院大根一つと小さな大根が二つ入っていました。ねずみ大根だろうと思いました。父にお礼の電話をして、小さな大根は何か尋ねると、思った通り、ねずみ大根でした。
比較のため、この二つの品種の大根を青首大根一本(上)と一緒に写真に撮りました。 
You may wonder why these small daikon are called nezumi daikon.  You will see why if you check these images:
何でこの小さな大根をねずみ大根と言うか不思議に思うかも知れませんが、次のイメージを見れば理由が分かります。
Nezumi daikon is a specialty of Sakaki machi, Nagano prefecture.  My father comes from Nagano, and likes this particular daikon variety.  It is a very pungent variety, and according to several websites, it is not only pungent but sweet, and the local people describe the flavor as "ama mokkura".
ねずみ大根は長野県坂城町の特産品です。父は長野出身で、この大根がとても好きです。辛味大根の一種で、サイトによると、辛いだけではなく、甘みもあり、地元の人はその味を「甘もっくら」と表現するそうです。

Nezumi daikon is often grated and squeezed to get the juice.  To the juice are added Shinshu miso, negi, katsuobushi, and other ingredients.  The juice is served with udon.  This dish is called o-shibori udon.

ねずみ大根は、おろしてから汁を絞ることが多いです。その汁に信州味噌、ねぎ、鰹節などを入れ、うどんと一緒に出します。この料理は「おしぼりうどん」と言います。

Harihari Zuke/はりはり漬け

The other day, I found wari boshi daikon sold at the supermarket.  I bought one bag without thinking what to do with it.
wari < waru = to break up, to divide
boshi < hosu = to dry
先日、スーパーで割り干し大根が売ってたので、何にしようか考えずに1袋かいました。
Wari boshi daikon is similar to kiri boshi daikon, but is thicker.
kiri < kiru = to cut
割り干し大根は切り干し大根に似ていますが、切干し大根より太いです。
Today, I decided to make harihari zuke with it.  I searched for recipes, and tried a 1:1:0.3 ratio for soy sauce, vinegar, and sugar.  (The original recipe called for a 1:1:0.5 ratio, and I was sure that this would result in a sweet pickle.)

Ingredients:
80 g wari boshi daikon
100 ml soy sauce
100 ml vinegar
33 ml sugar
8 x 8 cm kombu
1 red pepper, deseeded and chopped

Directions:
1.  Wash wari boshi daikon, and soak in a bowl of water for 30 min. or so to reconstitute.
2.  Drain, squeeze, and cut into 2-3 cm pieces.
3.  Combine all ingredients in a container.
4.  Let sit in the fridge for 3 hours or longer.
今日、はりはり漬けを作ることにしました。レシピを探し、しょう油、お酢、砂糖の割合1:1:0.3を試すことにしました(元のレシピは1:1:0.5なのですが、それでは甘い漬物になると思うので)。

材料:
割り干し大根 80 g
しょう油 100 ml
お酢 100 ml
砂糖 33 ml
昆布 8 x 8 cm
唐辛子(種を取り、刻む)

作り方:
1.  割り干し大根を洗い、水の入ったボールに30分程度漬けて、戻す。
2.  水を切り、絞り、2~3センチに切る。
3.  容器に材料を全て合わせる。
4.  冷蔵庫に3時間以上入れておく。

What Has Become of My Dried Persimmons (Hoshi Gaki)/私の干し柿はどうなったか

On November 18, I started to hang astringent persimmons (shibu gaki) in the garage to dry. Although I made sure that the window and the door of the garage were slightly open all the time, I have not yet succeeded in drying them to a satisfactory level as of December 15.
11月18日に、車庫で渋柿を干し始めました。常に車庫の窓とドアを少し開けていましたが、12月15日現在、まだ十分なレベルまで干せてません。

Anyway, I thought I should taste some, and brought two of them into the kitchen.
ともかく、試食すべきだと思い、二つだけ台所に持って来ました。
I expected that they would taste great because they were a bit like anpo gaki (semi-dried persimmons, made by first fumigating with sulfur and then drying), but
あんぽ柿(硫黄で燻蒸(くんじょう)してから干した、半生の干し柿)にちょっと似ているので、すごく美味しいと思ったのですが、

三口食べてから、渋が抜けていないことに気付きました!
Needless to say, I brushed my teeth soon after I took the photo above!

Tororo Meshi/とろろ飯

After watching a TV program featuring tanba imo (a type of yama imo, literally, mountain yam) last night, my son said he wanted to have tororo (grated yam).  For supper tonight, I decided to make a tororo dish.  I asked my son which he wanted to have, tororo meshi (cooked rice) or tororo soba (buckwheat noodles).   He replied, "Tororo meshi".  So, I bought two packs of tuna sashimi, together with yamato imo (a type of mountain yam).  (I wanted to buy tuna cut into chunks, but I couldn't find any.)
昨晩、丹波芋(山芋の一種)をテーマにしたテレビ番組を見て、息子がとろろを食べたいと言い出しました。今晩の夕飯にはとろろ料理を作ることにしました。息子にとろろ飯ととろろそばのどっちを食べたいかと訊くと、「とろろ飯」と言うので、大和芋(やまといも、山芋の一種)と一緒に、まぐろの刺身も買いました(まぐろのぶつ切りを買いたかったのですが、見つかりませんでした)。

Some sites say that rod-shaped yamato imo are now more popular, but I myself haven't seen such yamato imo.
棒状の大和芋のほうが今では人気だと言うサイトがありますが、私自身はそんな大和芋は見たことがありません。

My son and I decided to grate half the yamato imo for supper tonight and use the other half to make tororo soba for supper tomorrow.
息子と相談して、今日の夕飯には大和芋を半分おろして、明日の夕飯には残りの半分をとろろそばを作るのに使うことに決めました。 
I put 200 ml water to a pot, added some instant dashi and soy sauce, and brought to a boil.  After it cooled, I asked my son for help.  I added the broth in small amounts at a time, and my son mixed the grated yam and the broth.  We stopped adding the broth when we thought the texture was right.
鍋に水を200 ml入れ、出汁の素としょう油を少し入れ、沸騰させました。冷めてから、息子に手伝ってもらいました。私が少しずつ出汁を入れ、息子がとろろと出汁を混ぜました。とろみがちょうどいいと思ったところで出汁を入れるのは止めました。

My portion was very small.  My family, except my son, are not much fans of tororo.
私の分は少ないです。我が家は、息子以外、あまりとろろは好きではないので。

We also had leftover ara jiru (soup with fish trimmings).

Come to think of it, I think I should call our supper yama kake don rather than tororo meshi.
考えてみると、今日の夕飯は、とろろ飯と言うより、山かけ丼と言うべきでした。

Yama kake don refers to a donburi dish of hot rice with tuna sashimi and grated yam on top.

Experiment with Persimmons/柿で実験

Nearly three weeks have passed since I started to remove astringency from persimmons.  The persimmons are now very soft.
柿の渋を抜き始めてから、3週間近く経ち、今では、柿はすごく柔らかくなりました。
I peeled three of them, put in a pot, added 2 tbsp sugar, and put on the stove.  I didn't have to mash them.
3個、皮を剥いて、鍋に入れ、砂糖を小さじ2杯入れ、火にかけました。つぶす必要はありませんでした。 
The persimmons turned into a pulp in less than one minute.
柿は1分もしないで、ドロドロになりました。
Not bad.  I later added some lemon juice, but I found it was better without lemon juice.
悪くはないです。後でレモン果汁を足しましたが、足さないほうが美味しかったです。

Daikon no Yuzu Senmai Zuke Fuu/大根の柚子千枚漬け風

Today, I made daikon no yuzu senmai zuke fuu.
Senmai = One thousand slices
Zuke < Tsukeru = To pickle
Fuu = Style

I tried this recipe (Japanese only).

1/4 shougoin daikon (or any other variety of daikon), 550 g when unpeeled
1 tbsp salt
50 g sugar
1 small yuzu
4 x 6 cm kombu for dashi

今日は、大根の柚子千枚漬け風を作りました。

このレシピー(日本語のみ)を試しました。
聖護院大根(または他の品種の大根)・・・・・・1/4ケ(皮付550g)
塩・・・・・・・・・・大匙1
砂糖・・・・・・・・・50g
ゆず・・・・・・・・・小1ケ
だし用昆布・・・・・・4×6㎝ 1枚
Peel yuzu and cut peel into thin stripes.
柚子の皮をむき、皮を薄切りにします。
Squeeze yuzu.
柚子を絞ります。 
Cut daikon into thin slices, and put in an I-Wrap bag, and add yuzu peel, yuzu juice, sugar, salt, and thinly sliced kombu.  Put in the fridge for 3 hours or longer.
大根を薄切りして、アイラップに入れ、柚子の皮、柚子の果汁、砂糖、塩、薄切りした昆布も入れます。冷蔵庫に3時間以上入れます。

Too sweet for my taste.  My wife said she wanted it to be a little more sour.  I think I'll add some more yuzu juice or vinegar.
私の口には甘すぎでした。妻はもう少し酸っぱいほうがいいと言うので、柚子果汁か、お酢を足そうと思います。

Sun Fuji Apples Simmered with Sugar/サンふじりんごの砂糖煮

The other day, I got a box of Sun Fuji apples from my father.  My father comes from Nagano (aka Shinshu), which is famous for its apples.
先日、父からサンふじりんご(リンゴ、林檎)を一箱もらいました。父はりんごで有名な長野(信州とも)の出身です。
28 pieces in total.
全部で28個。
Fuji is the most popular apple variety in Japan, and is also popular in China and the United States.  In Japan, Fuji apples are cultivated with "bags", and Sun Fuji refers to Fuji apples cultivated without bags.  As the name implies, Sun Fuji apples get a lot of sunshine while growing, and are flavorful than Fuji apples, but are inferior in appearance and shelf life.
ふじは日本で一番人気のあるりんごの品種で、中国や米国でも人気があります。日本では、ふじは袋で栽培しますが、サンふじとは、袋なしで栽培したふじりんごを指します。名前の通り、サンふじりんごは太陽の光を受けて成長するので、ふじりんごより味がいいのですが、外見や保存可能期間で劣ります。 
In Japan, these translucent, yellow portions, called "mitsu" (lit. syrup) of an apple, are highly praised.  These portions contain sorbitol, and are actually less sweet than other portions of the apple.  Most Japanese mistakenly believe that these portions contain syrup, and some may even consider that syrup is injected into the apple, using a syringe.
日本では、このような半透明の黄色い部分(「蜜」と言う)が高く評価されます。この部分はソルビトールが含まれ、実際はりんごの他の部分より甘くありません。大半の日本人はこの部分に蜜が入っていると誤って信じています。注射器を使ってりんごに蜜を注入していると思っている人さえいます。 
You may find this article interesting.  In the United States, watercore-laden apples are considered defective.  Anyway, apples with mitsu in them are highly mature, sweet ones, and I myself am a little disappointed when I don't see mitsu in apples.
この記事を面白いと思うかも知れません。米国では、蜜(watercore)が詰まったりんごは欠陥と思われています。とにかく、蜜のあるりんごは成熟度が高く、甘いりんごなので、私自身、りんごに蜜が入ってないとちょっとがっかりします。
I don't want to cook such high-quality apples in any way, but my children do not care for apples very much, so I simmered two of them with 25% sugar.
こんな質のいいりんごは料理に使いたくないのですが、子供たちがりんごをあまり好きではないので、二個、25%の砂糖で煮ました。
I used "san on tou" (a type of brown sugar) instead of normal sugar.
通常の砂糖の代わりに三温糖(さんおんとう)を使いました。
